The blade is made of Japanese 420J2 stainless steel with just the right degree of flex to make the job of filleting simple. This “softer” steel enables the blade to bend without breaking so that it moves easily through the body of the fish to give you the ideal fillet. The handle is durable and contoured for filleting comfort. Neon highlights in the handle make it easy to spot in a marine environment—while still looking good with a basic black handle. This 9.5-inch Fillet’s blade is the right size for salmon, pike, steelhead, and most larger fish. Because of the greater girth of these fish and the extra surface area you’ll need to cut through, you’ll appreciate having a longer blade.
The blade is razor-sharp 420J2 stainless steel for excellent corrosion resistance—always important for use in a wet environment. The steel is also quite tough and easy to re-sharpen. The blade is a modified drop-point, so it’s a good slicing knife, while the slim tip gives it piercing capability and the ability to do detailed work. The Leek features the SpeedSafe ambidextrous assisted opening system.
